smokeshow crock pot carnitas
Carnitas is a traditional Mexican pork preparation that is super delicious but also loaded with fat. To make carnitas the customary way, you essentially boil pork in lard and then grill it a bit to add a little crispiness. While we're not afraid to indulge in saturated fat on occasion, the idea of scooping lard into a pot and cooking meat in it just doesn't sit right with us. So, we've adapted our own method that suits our lifestyle but does not compromise on flavor.
Here's an easy recipe for making a very tasty shredded pork, like carnitas, minus the added fat, plus lots of delicious flavor.
pork shoulder (about 2 lbs)
1/2 cup Orangeshow
1/4 cup orange juice
pinch of oregano
1 bay leaf
(garlic and onion optional but not really needed)
Add all ingredients to crock pot and cook on low for 8 hours or high for 4-5 hours.
The meat will be super juicy, soft, and tender. You can shred it using a fork and allow it to soak up more of the broth and flavor before serving. If you prefer slightly crispy carnitas, pan fry with a little oil.
Serve in tacos or burritos with your favorite garnishes.
